The character Mabel Choate was introduced in 7:11 The Rye as an old woman in NY, just trying to hold on to her marble rye. The actress who portrayed her, Frances Bay, was beckoned back for two more episodes: 7:15 The Cadillac Part 2 and 9:24 The Finale Part 2 where she was adored by millions of Seinfeld fans.

Mabel thinks NYC is dangerous, just because someone mugged her for her beloved rye. She has a pretty bad memory, but remembers things she forgot by word association. She likes tea, not coffee, and really loves marble rye bread. She loves this delicacy so much, that $ is no object, sharp witticism is available on command, and if it gets taken away from her, she'll not only bury you, she'll bury your whole family, like Terry Benedict.

Really, the only thing one can positively say about Mabel is that she's Happy Gilmore's grandma.
